Recipes-BeefSIRLOIN OF BEEF WITH WHOLEGRAIN MUSTARD- SERVES 4 INGREDIENTS 4 Sirloin sirloin or rump steaks salt & pepper 1 tbsp vegetable oil 25g/1oz butter 4 tsp wholegrain mustard 4 tbsp double cream Heat a large pan and add the oil and butter. Dry the steaks with kitchen paper and season. When the butter is melted place the steaks in, brown them quickly on both sides to seal in the juices, then lower the heat and cook to your liking. Sit them on the fat side for a minute to cook the fat well. Take the steaks out and leave to rest,keep warm. lower the heat, pour off any excess fat, put in the mustard and stir in to take up the juices, then pour in the cream. Check the seasoning, and serve with the steaks. |
